While introducing this Cab Sauv, it would be good timing and relevant. Cabernet Sauvignon is a late ripener. Although our growing season here in southern BC accumulates a lot of Growing Degree Days (average around 1650), it is given to us in a shorter period of time than our southern neighbours. The herbaceous characters of Cabernet are compounds called methoxypyrazines. These pyrazines metabolize only two ways – time or freezing! No one has ever said “aw man, I picked my Cab too late”, we now hang our Cabernet until it has experienced a frost or two. These cold temperatures cure the stems and pull vegetal characters from the clusters to the plants as dormancy begins. Sure, harvesting Cab after the second frost has its issues, but the resulting wine is well worth it! Fruit forward, cassis and black plum are dominant with a hint of olive. Enjoy now or age a few years.

"The Corcelettes Estate Vineyard is on the Upper Bench in Keremeos and is a mix of alluvial Stemwinder soils and gravelly sandy loam Similkameen soils. The Cabernet Sauvignon, notoriously hard to ripen, had no problems on 2020, as evidenced by its almost silky character, definitely rounder than the cabernet franc. Look for cassis, black plums and a subtle savory olive undercurrent. You can drink this now or wait five years; it is your choice — expected to be released in the fall of 2022." -Anthony Gismondi "A pungent 2020 cabernet sauvignon here from Corcelettes, true to type and place, swarthy and ripe, with plenty of dark fruit and an evergreen twang, cedar and sandalwood, with fine complexity all told. The palate is appealingly juicy, with lively, succulent acids and surprisingly fine-grained tannins, not exactly supple but refined nonetheless. Length and depth are very good. Solid, well-made, well-balanced wine, approachable at this young stage but surely better in 2-3 years, or hold late into the decade. Good value, too, in the premium cabernet world.
