In the cellar, we have these 1000L French oak vats. Vats are vertically oriented oak tanks with a much thicker oak stave then those used for barrels. They are thicker for structural integrity of the tanks but also aimed at reducing the oxygen exchange between the wine and atmosphere. Larger oak vessels like foudres and vats also impart a much more modest and delicate oak impact, therefore really allow our vineyards and varietal characteristics to blossom in wine. Our “Reserve” program for this Cabernet still utilizes the benefits of standard barrel aging for 18 months where oxygen exchange (maturity) is more rapid, benefiting young tannins and wine structure, but the wine is then transferred for an additional year of vat aging where reduced oxygen continues to mature the remaining delicate tannins while not fatiguing the wine. The result is a plush wine, where brighter fruit expressions (like cassis and raspberry commonly found in cabernet) are evolved into blueberry pie notes. The oak naturally expresses toasted aromas on the nose, but the palate is so juicy of dark fruits like blueberry and plum that it all comes together quite well. An additional year of vat aging certainly represents 5+ years of bottle aging so the wine is ready! Enjoy by fireside after sunset.
