2021 Cabernet Sauvignon
Sold Out!

When we chat about BC Cab, we must chat about grape growing… farming. Cabernet has found its stride here in the Similkameen Valley and to the east, Oliver to Osoyoos. It’s a variety that pushes both our viticultural practices and our climate. From when the vines awake from dormancy and pass through the following plant phases, we’re always quick to prioritize the work done in Cabernet Sauvignon. Getting the shoot count right and only allowing one cluster per shoot, ensures us a light crop load to concentrate both the seasons sun and flavours to the remaining tonnage. Leaf removal along fruit zone, canopy management and multiple passes of ‘green’ thinning are all very labour intensive.
2021 was one of extreme heat in Southern BC, and while some grape varietals ‘shut down’ in these hot temperatures, Cabernet has a heat tolerance to push through. Our commitment to the stony soil on the shoulders of the Similkameen valley is very rewarding, tasting this wine. An epic result of site and experience.
Although still in its youth, the concentration is great and is sure to blossom with another 4-8 years of aging. The ripe profile of this vintage makes this approachable on release, with structure to age.
