Cabernet Sauvignon could be the “Top Dog” on many people’s wine list picks. Many international cellars like to boast about their “Cab”. Within the wine industry, we sarcastically mock this behaviour. Like “oh great, here is another delicious Cab. Aged in French oak, with notes of cassis, great with steak blah blah blah”. Honestly, we don’t even know why we even do that! We love Cabernet! Maybe we like to cheer for the more underdog or less popular, lower profile wines of the world; who knows.

Well, our Cabernet Sauvignon is no underdog and it’s no time to be getting modest, it’s a “big dog” on our portfolio. Our Cab speaks a lot about the quality of our vineyard sites and our viticultural practices. There is a tension we’re able to retain in our Cabernet that sews the ripe fruit notes of blackberries and raspberry together with sweet tobacco and baking spice that make it simply crushable. The crunchy acidity keeps it lively and guess what?! An unbelievable pairing with a grilled steak!

90% of the wine is aged in French oak for 18 months (the 2022 portion) and 10% of the Cabernet is from our Reserve program that is from 2021 and aged for 36 months – 24 months in Standard barrels and 12 more months in an oak Vat!  

Cellar this “big dog” for an easy 5-10 years but don’t be afraid to load a shelf up and start enjoying now with all your steaks! It will not last.

"Expect an utterly distinctive cabernet sauvignon from the Similkameen. It opens with thorny black currant and blackberry, providing a lovely, fresh, sappy character to this medium-full cab. Anthony picked up on a dusty minerality in the previous vintage, and that's here again – almost Coonawarra-like – alongside a swath of desert shrub and Similkameen salinity. It's firmly structured at this stage, but with the fruit concentration to support the level of extraction. Best from 2028 to 2034. Corcelettes has hit another level with the 2022 vintage. Winemaker Notes
When we chat about BC Cab, we must chat about grape growing… farming. Cabernet has found its stride here in the Similkameen Valley and to the east, Oliver to Osoyoos. It’s a variety that pushes both our viticultural practices and our climate. From when the vines awake from dormancy and pass through the following plant phases, we’re always quick to prioritize the work done in Cabernet Sauvignon. Getting the shoot count right and only allowing one cluster per shoot, ensures us a light crop load to concentrate both the seasons sun and flavours to the remaining tonnage. Leaf removal along fruit zone, canopy management and multiple passes of ‘green’ thinning are all very labour intensive.
