The perfect wine to celebrate the holidays and ring in the new year with you special guests! This wine was well worth the wait as it required tedious riddling and disgorging throughout the entire crafting process. A labour of love, indeed. This is a fine expression of the traditional "Champagne" method of winemaking, and will have even the most skeptical sparkling wine critics impressed. We are thrilled with our first release of this sparkling wine, and hope that you enjoy the efforts we have made to make this an exceptional sparkle in your glass.

"Sharp, dry, pointed, nearly austere, gotta be just about zero dosage pinot gris as blanc de blancs. Very curious, dry as the desert and pure, fresh squeezed lemon. Fresh lemons, no desiccation, no bricking at the rims. Crunchy and crisp, juicy as F and a fine iteration of grape for style. Drink 2024-2026." -Michael Godel, WineAlign "The 2022 Methode Traditionelle comes off the Corcelettes Estate Vineyard on the Upper Bench, Keremeos, in the Similkameen Valley. The vines are hand tended, the fruit hand harvested, and hand sorted from a vineyard that is raised using sustainable, responsible, and organic farming practices. The secondary ferment in the bottle sees the wine aged on its lees for 15 months. Look for fresh lemon and yellow fruit scents. The palate is similarly bright with a tight mousse and strong mineral and saline notes under a citrus, green apple finish. This must be served with food to balance the freshness. Aged on lees for 15 months. Riddled and disgorged- traditional method- natural carbonation. Notes of nectarine pit, peach tart, yellow apple and lemon curd. The mousse is quite fine, and it finishes crisp and clean.
